The Khmer Rouge destroyed pepper plantations to make way for rice fields, and Kampot pepper was lost to the culinary world. Kampot Pepper was slowly introduced again after the fall of the Khmer Rouge and is finally seeing renewed interest outside of Cambodia. Although Kampot pepper has been the main stay of flavoring in the restaurants in Cambodia for many years, the recent international interest is seen as a positive step for Cambodian pepper farmers who live basic existence in the rural Kampot District.
